Marinated Brisket

This marinated brisket comes from Cody Wilson of John Day who picked it up from Afton Bloxham of John Day.

3-4 lbs. beef brisket
Marinade:2 tablespoons liquid smoke
1 teaspoon garlic salt
1 teaspoon onion salt
2 teaspoons celery salt
1 teaspoon pepper or lemon pepper

Pour the marinade over brisket and soak overnight.

Bake at 300 degrees for 4 1/2 hours or 275 degrees for 8 hours fat side up, wrapped in tin foil on a pan or in a roasting pan, covered. Brush with the following mixture 45 minutes before serving:

2 tablespoons Worcestershire sauce
2 teaspoons pepper
1 teaspoons salt
1 cup barbecue sauce

Bake for 30 minutes more.

Discard marinade and sauce.

Cody says the longer you cook meat and the lower the temperature, the more tender it is.

If you should decide to make your brisket in a smoker, as he often does, omit the liquid smoke.
